Hello T-it (Tistory neighbor) friends,
Today,
let's talk about something that everyone loves,
regardless of age and gender gopchang
(Korean-style grilled tripe)!
For me, when I think of gopchang,
I still remember the pork gopchang stir-fry my mom
used to bring home after work when I was young.
However,
due to the nature of the part where gopchang comes from,
which is the intestines where fecal matter passes through,
if the cleaning process is inadequate,
there is a possibility that fecal matter could be included
in the cooking process.
When I was in high school,
there were few regulations and hygiene standards for street food,
which led to a big issue of the presence of feces in
street vendor's stir-fried pig intestines.
This became a huge news story,
and even additional exposé videos were aired on food investigation shows,
causing a dramatic drop in sales of all types of products made
from intestines and eventually fading from people's memories.
On June 8th, 2018,
during an episode of the TV show "I Live Alone,"
Mamamoo member Hwasa went alone to a pork intestine restaurant
in broad daylight and ate pork intestine stir-fry,
pork intestine hot pot, and finally,
pork intestine fried rice by herself.
Hwasa's solo dining experience became extremely popular,
and as a result, the popularity and sales of
pork intestines increased significantly.
(Later, Hwasa received a certificate of appreciation and
pork intestine gift vouchers from the Korean Livestock Association.)
Pork intestines, which continue to be popular these days,
come in various types,
and if you don't know which is which,
shall we take a closer look at the types of pork intestines?

Now, let's take a look at the different types of pig intestines.
Most of the affordable types of intestines come from pigs,
and they are one of the most popular products among the public.
-Pig small intestine (Sochang)
: Since pigs are much smaller than cows,
their small intestine is also small.
Therefore,
it is mainly used for the outer layer of blood sausage.
-Pig large intestine (Gopchang)
: The pig large intestine,
also known as the colon,
is commonly used in street stalls or specialized restaurants.
Since it is the path for feces to pass through,
this area requires thorough cleaning by professionals.
Although some people try to save money by
purchasing pig intestines and cleaning them at home,
the smell is so severe that it is impossible to do so.
It is essential to use products that have
been cleaned by professionals, and even then,
there may still be tiny fecal matter present,
so additional cleaning and confirmation should be done before cooking.
-Pig rectum (Makchang)
: This is the area between the end of
the pig's large intestine and the anus.
Since the length is short and production is low,
the price of Makchang is higher than that of Gopchang.
However,
it is difficult for the general public to distinguish between the two,
so some stores mix and sell them together,
or even call Makchang "Gopchang" and sell it as such.
Let's learn about beef intestines, or "sogopchang" in Korean.
Compared to other parts of the cow,
small intestines are a crucial part for freshness.
When frozen,
the quality of taste deteriorates significantly,
so they are typically kept refrigerated and
directly delivered from suppliers to sellers.
Due to the limited supply and high demand,
shops that specialize in small intestines are rare and
the price is similar to premium cuts of beef.
-Beef small intestines (Sochang)
Contain a lot of small intestine filling,
and the amount of filling is directly related to quality.
The filling is the mucous digestive fluid found in the small intestine,
and frozen small intestines can be easily distinguished
by the lack of lining.
-Beef large intestines (Gopchang)
Contain almost no filling,
and are much fattier than other types of intestines,
making them less healthy.
They are often flipped over to look like small intestines,
but beef large intestines are priced lower than
beef small intestines.
-Beef Makchang
Many people think beef Makchang is a part of
the cow's intestines like pig Makchang,
but it is actually a separate part.
Cows are herbivores and have four stomachs and three long intestines.
The four stomachs are, in order,
the first stomach, honeycomb stomach, psalterium, and Makchang.
The texture of the Makchang is chewy and
it is a popular high-protein food.
-Yang tripe
Yang tripe is a combination of the
first stomach of the beef-intestines.

Intestines are a highly nutritious food that
can help with energy restoration,
digestion, and even skin care.
However, as they are high in fat,
for those with cardiovascular disease,
