Front leg vs hind leg
This story is a translation of my personal opinion as a Korean for non-Korean speakers.
Please let me know if anything is uncomfortable for you as this is my personal story,
and please direct any comments or concerns to me as an individual,
not to Korea as a whole.

Hello, T-IT (Tistory neighbors),
Today, let's take a look at pork cuts that may not be loved by everyone:
the pork-front leg and pork-hind leg.
Usually, when ordering pork trotters,
the front leg is priced slightly higher than the hind leg.
With curiosity about whether there is a significant difference in taste,
I conducted some research.
[Front Leg and Hind Leg]
Pork Front Leg ✨
Compared to samgyeopsal (pork belly) and moksal (pork neck),
this cut is extremely cheap.
As pigs use their front legs a lot for walking,
the muscles are well developed, making it a tougher cut,
but also lower in fat and high in protein.
This is the most commonly used cut for making Korean-style BBQ pork,
and is often used to make ham.
Compared to the hind leg, it is more chewy,
and was the cut I ate the most when I was a student living on my own.
I remember it being around 1,000 won per kilogram back in 2013.
In foreign countries,
the Hind Leg is often preferred,
so only front leg and neck cuts are exported as
a single cut called "shoulder(boston butt)"
In Korea, this product is often imported and then separated into
pork neck and front leg cuts or used pure.
Pork Hind Leg✨
In foreign countries,
the part with less fat and more protein is priced very high,
making it a very expensive.
As a result, it is almost never imported to Korea,
and is mainly used in homemade hams or German-style pork jokbal(Schweinshaxe).
However,
as the production volume in Korea is not that high,
we have chosen to consume it domestically rather than export it.
Most seasoned pork hind Leg products are made with domestic pork,
which is why they are typically labeled as "Han-don" pork.
If you visit an inexpensive restaurant that uses domestic pork,
you can assume that they are using this cut.
I remember that back when I was living alone in 2013,
it cost around 800 won per kilogram.
For teenagers who are at an age when they eat a lot and for solo-dwellers,
pork hind leg is can be purchased even cheaper than a whole chicken.
However,
it can sometimes be hard to find at a meat store since it is so cheap.
We recommend either searching for stores that sell it or buying it
in bulk online and dividing it into smaller portions for freezing.
I also remember buying and seasoning pork leg meat
for about four years when I lived alone.
It is an excellent pork hind leg for those who exercise or are on a diet,
but it has a unique meaty smell,
so spices are necessary.
It can be tough,
so when making the seasoning,
pineapple or kiwi is usually added.
Personally,
I found it most convenient to simply boil it
and make pork leg kimchi stew or eat it like boiled pork belly.
When I was younger,
I was not picky about meat and enjoyed eating everything,
but some people may find it challenging to eat other than pork belly
or pork neck due to sensitivity to the meaty smell.
