Hello, my fellow T-it (Tistory neighbor) friends!
Today, I would like to seriously discuss veganism,
alternative meat, and cultured meat.
As someone who works in the meat processing industry,
I have planned products using alternative meat.
However, in Korea,
the awareness and demand for alternative meat are still low,
so it remains only as a plan for now.
"I am a type of person who enjoys both meat and vegetables,
so I would say I am an omnivore 🙏
However, if alternative meat is perfected in the distant future,
I might become a perfect vegan...
(Of course, the blog-nickname '채식주의자(Vegan)' is
a wish to eat more vegetables...)
First, let me explain in detail about veganism.
Veganism is a way of life that involves reducing animal-based foods
and surviving on a plant-based diet."

Unless one is born an elf,
excluding fruitarians, consumption of alternative meats
(such as beans and mushrooms) is possible,
and the population of vegans has been increasing
in many countries recently.
As of 2021, the vegan population in South Korea is
estimated to be around 2.5 million people,
which is about 5% of the country's total population,
and cannot be ignored as a significant customer base.
The younger generation,
who are sensitive to animal welfare products and
environmental protection, is also increasing.
Moreover, vegan products cost less than meat products,
but companies are investing heavily in them
because they can still sell them at a high price
to those with limited options,
making it a profitable venture.

However, as many of you may have
already experienced by trying most of the alternative
meat products available in the market,
their taste and texture are very poor.
Why have they been made to
taste like bland potato pancakes?"
I want to invest more in seasoning,
but I hit a limit because I have to use only
plant-based ingredients for seasoning,
and I end up missing out on both
the seasoning and the meat.
Korean cuisine has a unique feature in
that there are many delicious dishes
made from soybeans.
Just think about it for a moment:
dishes like bibimbap, tofu, soy milk,
doenjang jjigae, and kongguksu are superior
in taste to meat substitutes,
and there are many of them.
So why should we eat expensive and
tasteless meat substitutes?
That's the question that comes to mind.
In fact, those who make dishes like tofu noodles
and mushroom-sweet and sour pork
deserve recognition and praise.
Due to these issues,
the vegan craze in Korea may continue,
but it may be difficult to see significant
growth beyond its current level.
Even in the United States,
famous alternative meat companies experienced
a 90% drop in their stock prices,
as the number of companies supplying and
developing vegan products increased rapidly,
leading to intense competition and
ultimately creating a red ocean market.
Of course, there is also the issue of decreased
income due to interest rate increases,
but it is evident that it will be challenging
for households to maintain expensive
and challenging vegan diets in
such difficult circumstances.
It is true that continued cattle farming poses
a threat to the planet due to the carbon
emissions it generates,
but there are solutions available.
This product is called cultured meat,
which is made by growing stem cells in
a culture medium to produce meat.
It can reduce greenhouse gas emissions by 90%,
and is expected to become cheaper than real meat.
Formerly,
beef cost tens of billions of won per kilogram,
but now it has dropped to around 2$ per 100g,
with great value for the price.
It is so difficult to distinguish from real meat
even in blind taste tests that
it can be applied in real life.
Thanks to the development of cultured meat,
one of the reasons why the increase in the vegan
population has become difficult to explode as before,
which was due to the disappearance of
the reasons for being vegan.
I believe that ethically,
this is a better choice for the future of humanity
because it eliminates the need to kill or raise animals.
If someone doesn't forcefully impose it on me,
I don't dislike veganism.
In fact, I really love expensive vegetables.
However,
I think I need meat for a partial vegetarian diet.
Of course, those who have allergies to meat
have no choice but to minimize meat consumption,
but even they don't impose it on others.
I understand and respect both carnivores,
vegetarians, and omnivores alike 🙏
Moving forward,
I hope for a gradual reduction in meat production
for the sake of our planet's environment,
an increase in cultured meat production,
and a fair society for all vegans✨
