Analysis of Seoseo Galbi
and Idong Galbi
[Note]
The pronunciation of 'Seoseo' means 'to stand' in Korean,
and the pronunciation of 'Idong' is a homophone in Korean,
meaning 'to move' as well.
This story is a translation of my personal opinion as a Korean for non-Korean speakers.

I recently learned about the term 'seoseo galbi'.
While I was talking about Seoseo-galbi and Lee Dong-galbi,
my friend said,
He said, "Why do you 'not to moving' eating, Lee Dong-galbi?"
As a joke, I said nonsense to my friends,
"Then do you eat standing to seoseo-galbi?"
And the response was,
"Uh! "Seoseo-galbi is a standing rib because you eat it standing up."
He's talking shocking nonsense.

While I was curious,
I looked into the topic of "seoseo galbi".
There wasn't as much accurate and detailed information
as I thought there would be,
and a lot of the information passed down through word of mouth
was not entirely accurate.
"Seoseo-galbi originated in the modernization era after the Korean War.
The most famous area is said to be the starting point of Mapo
in the 'Mapo Station' district of Seoul,
and 'Mapo Station' song is the origin,
'Eunbangwool Sisters,' the trot classic released in 1968."

In the past,
there was a streetcar called the
"Seoul ground train" in Seoul.
Although it is no longer in service today,
at the time,
it was a useful form of public transportation that helped
the working-class people of Korea with their daily commute.
Seoul had a "Seoul ground train" that used to run before,
which was a useful transportation for working-class Koreans at the time,
even though it's no longer in operation today.
The last stop of the northernmost end of the line was Ma-po Station

During the days when people were rushing around,
knights and workers who wanted to consume
high-quality protein quickly came across the method of
"standing and grilling" Galbi in front of a drum charcoal fire
that could accommodate a large number of people at once.
The operation style of the standing galbi restaurant,
which served SeoSeo Galbi,
was similar to today's fast food at that time.
It was an operation style that provided quickly to many people,
and also aimed for high customer turnover by allowing customers
to eat quickly and leave.
Nevertheless,
they were able to serve a lot of high-quality standing rib galbi,
which made them incredibly popular at the time.
To increase the customer turnover rate,
the restaurants that served so-galbi and alcohol only provided
a minimal amount of side dishes.
They did not sell common dishes that we can easily find these days,
such as soybean paste stew or cold noodles.
Some restaurants did not even provide vegetables
like lettuce and perilla leaves.
It was a culture of eating meat quickly and leaving the restaurant.
How could they sell and eat such expensive beef when
it was a luxury item for most people at the time?
Although it was difficult for people to come across the precious beef,
the area near the Mapo terminal was a landmark
and had a large floating population,
attracting many people and even logistics.
Therefore,
they could easily purchase beef in large quantities,
and as there was a shortage of freezing systems at the time,
they had to quickly consume the beef.
As a result,
they could sell it at a minimal margin,
making it affordable for customers affordable for the owner.
The reason why the name 'Seoseo Galbi' can be used
without copyright is that there were many restaurants serving galbi
where people would stand and eat,
and the name became popular through word of mouth,
so it couldn't be patented.
When inquiring at the patent office that handles trademark rights,
the name 'Seoseo Galbi' was repeatedly rejected,
and even when approved,
people would raise objections and it would be canceled quickly.
People who try to monopolize the name "Seoseo Galbi"
should really be scolded.
Similarly,
"Idong Galbi" is one of the nouns that is difficult to register
for trademark rights for the same reason.
If there is "Seoseo Galbi" in Mapo, Seoul,
there is "Idong Galbi" in Idong-myeon, Pocheon.
If "Seoseo Galbi" is not-marinated galbi,
then "Idong Galbi" is marinated galbi.
(Of course, even Idong Galbi is now being sold
as not-marinated galbi to fit with the trend.)
Most of the real Idong Galbi is almost nonexistent and
is produced using molding techniques using food adhesive
(egg powder),
so there are hardly any products that can be called galbi.
The term "adhesive" is used negatively in some media,
but in fact, edible glue is made from
completely safe ingredients for the human body.
It is composed of eggs with complete ingredients.
The regulation for the noun 'galbi' specifies that
galbi is the meat cut directly from the rib bones,
such as pogalbi which is made by minutely cut with a knife
the meat on the bone.
However, due to the insufficient supply to meet the demand,
a method was created where galbi is made by
combining galbi-meat with rib bones, resulting in "galbi o,"
while using other galbi-meat
with rib bones does not result in galbi, known as "galbi x."
But, it is common for cheaper cheap meat to be used
instead of galbi-meat.

In such cases,
online shopping malls suggest that we can accurately
identify the ingredients through the labeling information,
and for offline stores,
if we carefully observe the joints between the bones and meat,
we can tell if they mix other meats in,
which would be unnatural.
If they deceive customers by calling such products '○○ galbi',
then we should report them.
However, phrases like 'grilled galbi-flavored ○○grilled meat' or
'charcoal-grilled galbi-scented ○○grilled meat' are legally allowed,
so let's not fall for deceptive advertising and make informed purchases.
(It turns out that honest labeling is often a sign of good quality.)
In fact, the current trend is boneless meat,
but this phenomenon has arisen because people in their 40s
and older prefer parts with bones.
If someone deceives by attaching other meat to
the bone and selling it as ribs,
they can be held legally responsible.
Although it might be common to make ribs by attaching bones,
it would be better if people quickly started looking for
boneless ribs to avoid unnecessary work.
Anyway, the name 'Idong Galbi' originated from the name of in Idong,
Pochun, who operated a restaurant with the sign 'Idong Galbi' 30 years ago.
The problem was that due to its popularity at the time,
many fake Idong Galbi restaurants sprouted up,
and because the trademark was not properly registered,
it became a noun like 'Seoseo-galbi' that anyone could use.

we've learned about the differences between Seoseo Galbi,
which is best enjoyed while standing up, and Idong Galbi,
which doesn't necessarily have to be eaten while on the move.
